Mr Hive Kitchen & Bar, Crown Metropol’s signature restaurant is the brainchild of Executive Chef John Lawson. Influenced by dining in London, Melbourne & New York, John applies his traditional French cooking techniques in a modern context. He has created a menu that is reflective of his British heritage & the love of comforting dishes that burst with “big flavours”.
At just 29, he is an accomplished chef with enviable credentials that include stints working with Raymond Blanc at his 2 Michelin Star restaurant, Le Manoir aux Quat’Saisons.
